Ingredients for a Healthy Caesar Salad:

Parmesan cheese (Parmigiano Reggiano) gives the salad a cheesy and savoury flavour; it is used in both the salad and the dressing. Grana Padano is also a good option. If you want to make a vegan Caesar salad, you can use nutritional yeast to add to the salad. 

Boiled eggs are an excellent source of healthy protein in Caesar salad. You can shred the boiled eggs in the salad or you can also simply chop or add slices. 

Chicken: Add the crispy grilled chicken to your salad. As many of you have asked how to make chicken Caesar salad, that’s why I have used chicken here. But you can also add tofu as a vegetarian option. You can create crispy breaded tofu, which is similar to chicken cutlets.

Croutons give a crisp texture to the salad and complement it perfectly. You can also prepare healthier homemade croutons from whole grain bread, which you can simply sprinkle in olive oil, dried oregano, and garlic powder before baking until crunchy. You may also use gluten-free bread or sourdough.

 

Making the Perfect Crispy Chicken

  • Split the chicken breast in half to get two equal-sized, thinner pieces. Cut each half into strips about ½ inch long. Keep in mind that when cooked, they will expand slightly.
  • Dry the strips completely before dipping them into the whisked egg. Use your fingers to slide off the excess; if it’s too wet, it’ll leak through the bread. cover well in the breading mixture.
  • In a 10-inch cast iron skillet, heat 1 cup vegetable oil. If possible use an oil thermometer to check when the oil has reached 350 degrees.
  • Once the oil has heated, carefully add the chicken strips, allowing enough space between them so they stay out of contact. You will need to fry in portions. Once the first side is golden brown, use kitchen tongs to carefully turn the chicken over, which should take 3-4 minutes.
  • Set the fried chicken away on a cooling plate to keep it crispy below. Add more chicken to the pan as soon as you remove any. Once cool enough to handle, cut them into small pieces and sprinkle them over the salad right before serving.

How To Make Chicken Caesar Salad?

It takes very little time to make a healthy Caesar salad at home. Here are some easy steps that can help you make your chicken Caesar salad at home.

 

  • Chop the romaine lettuce into large portions. For extra crisp lettuce, immerse it in a big dish of cold water with ice cubes for 10 minutes. Drain and then dry.
  • Boil eggs, then cool in the refrigerator.
  • Put all of the salad dressing ingredients in a blender and sprinkle with salt and black pepper. Mix till smooth.
  • Thoroughly shred the parmesan cheese, then grate the eggs with the same grater. Add the chicken pieces to the salad.
  • In a large salad bowl, add romaine lettuce, grated eggs, ¾ cup parmesan cheese, half of the croutons, and half of the dressing. Toss gently, then top with remaining croutons and protein of choice. Serve with the remaining parmesan cheese and a little bit of extra dressing.
